Using a Chamber Vacuum Sealer in External Operations

You don’t really need a vacuum sealer for most of what you cook SV. The main point for most things is to get enough air out of the bag so what you are cooking will remain under the water. There’s nothing magic about a vacuum that I’ve discovered. This can be done with regular ziplock bags by just putting the food in, then slowly lowering it into the bath and letting the water push the air out as you lower the bag. Then you dip one corner and slowly start to seal while pushing it under water. That works great for things at lower temps. Ziplock also has a brand of vacuum bags that come with a hand pump, they come in gallon and quart sizes. They work just fine for pretty much everything, especially things where you add liquid into the bag or cook at a higher temp, which causes the bag to puff up a bit after it cooks a while. You just check on it every few hours and pull it out then pump a few more pumps of air out. The sealers in the $100-$200 range really don’t add much, and are tricky to use with any kind of liquid because they will suck it in. Now, if you look at the chamber vacuum sealers, which run $1500+, those give you some great options. **TLDR:** If you are thinking of getting a $100-$200 clamp style vacuum sealer for SV don’t. Use either normal or vacuum ziplocks. However a $1500+ chamber vacuum sealer might be worth the investment depending on what you want to do.
