My canning and food preservation barely provides for our needs, let alone to give away. My food gifts were homemade granola (the chocolate crunch at Cooking Light is fantastic), chocolate chip cookies, and a homemade potpourri.
Holiday Potpourri
1/8 cup mulling spices
3 bay leaves
1 cinnamon stick (I used 3″)
several pieces of dehydrated apple ends (scrap pieces)
I dehydrated the apples myself, but you can buy them commercially at the grocery store or from a bulk foods bin.
The spices were from Penzey's, who has a local store. They are very fresh and reasonably priced especially for large purchases. You can get more info or mail order from http://www.penzeys.com
I used my food sealer to make the bags. I punched a hole in the corner outside the seal and used a curly ribbon to attach a card that said it was homemade by me and the instructions for use.
To use the potpourri, fill a medium sauce pan about half full with water, dump in the bag, bring to a boil. Reduce to a simmer and enjoy. Set a timer to check the water level every 30 minutes while simmering.
I can get about three days from a bag of potpourri.
I have used one for years. I love it. I freeze sauces and stews, You just can't let the air suck out completely if at all. The meat stays fresh with no freezer burn. One other thing that is good is, if you freeze a stew you can just put the bag in a pot of boiling water to heat it, no mess to clean up.
You must buy the bags tho recommended for the machine. Yes they can be expensive but in the long run you will save money and remember you won't be using them for everything you buy. I use the bags only if I am not using the meat and sauces for a few weeks after buying. No odor comes through the bag if this is what your asking. Hope this helps.

Used properly it is great, vacuum sealed food lasts far longer than any other option Plastic is permeable, thus if it is not frozen odor will permeate through. This is the case even with ziploc bags too. Except ziploc are not vacuum sealed.
