I recently stumbled upon a new method of dry aging in my fridge. I use a bag that is moisture permeable and can be vacuum sealed. People always tell me they can't believe it. But it works 100%.
I vacuum seal my ribeye that I get at Costco into this Drybag and age it in my fridge for 2 weeks. After the 2 weeks I take it out and trim off the outside crust that forms as a result of dry aging. The steaks have that dry aged flavor that I love and the texture is fantastic.

Have to have a vacuum sealer (they sell one) I used my Sinbo sealer and the meat has to lay on a wire rack to allow air to go all the way around the piece.
If you use a vacuum sealer, you would be “wet aging,” if I’m not mistaken, which is generally considered inferior to dry aging.
"FoodSaver" be one of the better brands on the market (have one) butttt, the co$t is a bit high. 2nd link is for a' Deni on ebay that's a' pocketbook saver, might add that it has free Shipping & Handling, now as for the quality, that I'm not sure of… 3rd link is sealers and bags on ebay w/ their "Buy Now" option. Hope it helps out somewhat;)…

Note: Found that the most economical way to purchase the sealer bags for them is the bulk (large) roll instead of the pre-cut ones…
I did things this way for a while… I shelled out for a cheap vacuum sealer a while back, and it’s great. That said, to help with temp control, use the largest water bath you can. With a 20 quart stockpot, and lots of experience with my stovetop, I can get it stable to +/- .2 degrees for hours at a time without touching it.
Hi, i would check out your local Walmart store, they would have a good food sealer that you could use, or try any kmart or fod store.
